I suggest using both your names at the end, old name in parenthesis, solely due to the fact that it's your current legal name and the one they have on record (I totally understand not wanting to though). If it is going to be a physically printed and mailed letter, I suggest signing both names as well in the same fashion. Black ink, sign Zeta Syanthis about 2-3x bigger than the font size you use, sign old name in parenthesis possibly in a smaller size.
Since you are extending an option for them to reach out and contact you in the last paragraph, I also suggest having your contact information below your signature.
